Delicate scents evoking bread crust, red berry, and peach mingle with a floral note of field flower. On the savory elegant palate, a soft perlage accompanies strawberry, pomegranate, tangerine, and a hint of ginger before a crisp finish.
After remaining at least 6 months inside the tanks for the maturation process, the wine receives selected yeasts, prior to being bottled. The bottles are then stored horizontally in piles for the long re-fermentation process and maturation at ambient temperature constantly kept at 12 °C.
The vinification of these grapes forms the basis of the creation of sparkling wines in the line known as “Il Mattaglio”, while the Lambrusco di Sorbara grapes are used to produce the renowned Traditional Method Sparkling Lambrusco of the Cantina della Volta. Our Rosé is obtained from a selection of the best Sorbara grapes entirely gathered in small cases (17 kg. max) by manual harvesting, then softly pressed.
