Medium-bodied, dry, a fresh-style orange wine with a nose of stonefruit. The palate displays ripe apricots and oranges balanced with drying tannic properties from grape seeds and skins during maceration. Savory and slightly oxidative on the finish.
Elios was born from the passion of two young Sicilian friends. The 8-hectare vineyard is located in the rolling hills west of Palermo. Modus Bibendi was born from the strong conviction that wine should be made through natural vinifications and little to no intervention or use of chemicals.
Hand-harvested from vines grown in chalky clay soils at ideal phenolic maturity: Grillo and Zibbibbo are harvested in the last week of August, while Catarratto in the second week of September. The wine sits on its lees for 7 months before being bottled unfined and unfiltered.
