On the palate it is very well balanced with fine tannins and a delicious aftertaste that is long and fresh. This wine is ready to drink immediately, but will only develop its full potential during the next 15+ years.
The La Ca Növa winery is located just outside the municipality of Barbaresco. Marco Rocca, the owner, produces uncomplicated and classic wines. He is a very modest man who carries out the daily work in the vineyard with great experience and consistency. He thus creates the conditions to be able to produce grapes of optimal quality.
The grapes for this Barbaresco are carefully harvested by hand in October and then immediately destemmed and lightly pressed. This is followed by fermentation in open wooden vats for a maximum of 20 days. Maturation then takes place over a two-year period in large Slovenian oak barrels, in keeping with tradition. A six-month bottle storage then completes the maturing process.
Marco is an old-school winemaker who is influenced by the tradition and culture of the region. Thus he produces his wines almost without modern technology. The fermentation takes place without temperature controlled tanks and only with natural yeast. As in the past, Marco uses open wooden vats. The circulation of the mash during the mash fermentation is then carried out with a large wooden spoon. A very exhausting and time-consuming process, but which extracts more colour and polyphenols.
