A beautiful soft pink hue, this wine has subtle cherry and raspberry notes on the nose, with a slight but pleasant funky freshness.
This wine is made only from the 'cœre de presse', the best of the pressed juice in the méthode traditionnelle, where the bubbles are produced by a secondary fermentation in the bottle, and aged for a minimum of 12 months in our cellar.
We feel our wines are balanced with just the right amount of mouth-watering acid, bold fruit flavors, and herbal elements from each wine's respective terroir as to be perfect for pairing with any food you like, whether it be fish, poultry, or meat, no matter the varietal.

Our name, MEDIVOL, is a mix of MEDI from the Mediterranean, and VOL, the French world for Flight.
