This wine is made in the méthode traditionnelle, whereby the effervescence is produced by a secondary fermentation in the bottle. It's then delicately gravity-pressed pneumatically and fermented in stainless steel. With limited yields, this wine is quality over quantity all the way. Hand-harvested and matured sur lie on fine lees for between one and two years, there is no better bang for the buck than this bubbly.
We believe that sustainable, biodynamic, and organic farming of vineyards and traditional, responsible wine-making methods should be celebrated, as well as the fruits of that labor enjoyed by everyday consumers and beverage professionals alike.

Our name, MEDIVOL, is a mix of MEDI from Mediterranean, and VOL, the French world for Flight.
